Have you ever tried cooking spaghetti squash? Have you almost cut your hand off in the process of trying to cut it in half before baking it in the oven for what felt like forever? Here is a new trick – prick the squash and place in a microwave safe plate and microwave for 2 minute increments for about 12 minutes. Then carefully (with mittens) cut it in half with a sharp knife and scrape the squash into a 9*9 oven safe container. While the squash is cooking away cook onion and garlic til golden in coconut oil and then add 1 lb of ground turkey and parsley. Once that is cooked remove any grease and then add 3/4 of a jar of pasta sauce and mix together with Parmesan cheese. Place turkey on top of the squash and bake in the oven at 375 for 20 minutes.
