Where did you go….

Hey I’m here..I’ve been here all along just super busy with life and chasing around 2 growing kids and teaching a baby to love cereal mixed with his fruits 🙂

While I have been on hiatus I have been really working on eating healthy everyday and taking care of my body…I feel convicted by 1 Corinthians 6:19 and have been on a mission to strive to be healthy and let me tell you….you feel so much better about yourself and just more healthy dd11e8230bc2760a381b9c0e8b8768fb

I have been making green smoothies for work and today I made this great snack that I’m sure you will love and it is so easy!

Nom Nom Green Smoothie

Have you ever had a green smoothie so delish you wish you could have it for breakfast, lunch and dinner? 

Well my friends this has happened to me today…so easy yet so amazingly delish

1 c coconut water

1 c spinach

1 c frozen tropical fruit (best deal was Dole at Sam’s to support my breakfast, lunch and dinner craving)

1 Tbsp chia seeds

1 Tbsp coconut

Mix in blender til smooth and enjoy for breakfast, lunch and dinner…you can thank me later!

Detox Smoothie

You know everyone is on the band wagon..the get healthy NOW band wagon..so naturally I join as well. Being healthy has been something of great importance to me as of recent. Why do you ask….I got so tired of always feeling tired and so tired of feeling nasty when I ate garbage…you know the saying garbage in, garbage out…well that is a TRUE statement!

The lovely Lauren Conrad, has an amazing site, with amazing detox recipes I love them all most of them 😉

For this smoothie you need to put the following into your blender….NOW

1 c coconut water

1/2 avocado

1 apple roughly chopped

2 celery stalks roughly chopped

1 c frozen berries

1 fresh lemon squeezed

4 ice cubes

1 Tbs coconut oil

1 beet roughly chopped (I didn’t add this, as I was concerned for my blender LOL)

Blend til smooth and enjoy!

Turkey Zucchini Meatballs

You had me at hello…is what I said when I saw this post about these amazing meatballs of turkey goodness. And YES I know people do meatless Monday…sorry I don’t

I made a few changes but more so with how to cook it..I often don’t have time to brown and then bake and make my own sauce

My alterations were the following:

1/2 jar of seasoned sauce and 1 can of plain sauce 

layer the bottom of a large baking dish with sauce, using a scooper place the meatballs into the pan and then add the rest of the seasoned sauce with the plain sauce to the top of the meatballs and put more Parmesan cheese on top and then bake in the oven at 375 for 40 minutes and TADA…I promise…it will be TADA 

Spaghetti Squash with Ground Turkey

Have you ever tried cooking spaghetti squash? Have you almost cut your hand off in the process of trying to cut it in half before baking it in the oven for what felt like forever? Here is a new trick – prick the squash and place in a microwave safe plate and microwave for 2 minute increments for about 12 minutes. Then carefully (with mittens) cut it in half with a sharp knife and scrape the squash into a 9*9 oven safe container. While the squash is cooking away cook onion and garlic til golden in coconut oil and then add 1 lb of ground turkey and parsley. Once that is cooked remove any grease and then add 3/4 of a jar of pasta sauce and mix together with Parmesan cheese. Place turkey on top of the squash and bake in the oven at 375 for 20 minutes. Image
